The mystery of this pizza crust formula took some doing to unravel. You know, I tried so many flours and fermentation times, always ending up with something ok, but not memorable. Enter Giusto's 00 flour, and the whole game is changed up. This formula is a keeper. More than that. It's chewy and crisp and perfect. Totally artisan, if you will.

Girl Meets Rye Signature Pie: Allium & Comte Cheese

Below are some pix of some topping experiments, but I am providing no recipe for them, as a proper pizza is very personal thing. Some people like meat on their pizza, I can't abide by it (unless it's prosciutto). Some people toss rings of golden pineapple over their dough, I cannot fathom why anyone would ruin a good pie. So, I will leave the toppings to your fecund imaginations, but below are some of the pies I forged with friends if you are looking for new ideas. Now if I can just perfect my shaping, all will be right in my famished little world.

I have been away for a bit. Life, you know. But here we are, back at the page, and I can't think of a better way to pick up where we left of with a handful of fabulous pies.

Girl Meets Rye Pizza Dough


The day before you plan to make your dough, make a levain.

75g dark rye flour, I milled my own
75g h2o
10g dark rye 100% hydration starter

Mix together the above and ferment. Mine fermented for around 7.5 hours.


All of the levain
500g Giusto's 00 flour
360g h2o
12g salt, I used Diamond Kosher
10g good olive oil, I used California Olive Ranch

Mix up the levain, the flour and water. Autolyse for one hour. After the autolyse, squish the salt into the dough. When it is thoroughly incorporated squish in the olive oil.

Now time for the 4 hour bulk. During the first hour, turn the dough every 20 minutes. During the second hour, turn the dough every 30 minutes. For the final two hours, leave it unmolested. If it is very warm where you are now (over 75 degrees I would say), you can pop the dough into the fridge to finish out the fermentation. I made this dough twice. Once when it was cooler, once when it was warmish. I did the bulk fermentation at room temp when it was cool, and popped the second go round in the fridge for the final two hours of fermentation with fine results both ways.

After the bulk, scrape the dough onto a work table that has been slicked with olive oil. Divide into 4 or 5 pieces, twist about into loose rounds and let it rest for five minutes or so.

After the rest, shape more firmly, then scoop the rounds into bowls that have been generously slathered with olive oil. Cover with plastic wrap and pop the rounds into the fridge for 4 hours.

An hour before you plan to bake, preheat the oven to 550 degrees outfitted with your pizza stones.

After the final fermentation, pull out and shape into pies. I did this right on a large peel lined first with parchment. I worked two doughs this way, stretching them both out first, letting them rest for about 10 minutes before adorning them. I like my toppings to flow over the sides of my pizzas, but if you would prefer the more classic style with a rim of crust, then instead of stretching your dough to a uniform thickness, leave a raised perimeter around a depressed center and just fill the center with toppings. The edges will puff up nicely.

After adornment, I was able to slide the two pies into the oven at once, parchment and all, before moving on to the next round of doughs.

Bake until the edges are browned, these which you have obviously very generously brushed with olive oil just before popping them into the oven. You will have to rotate the pies at least once during baking. It's simple. Just grab a corner of the parchment (careful not to hit the sides of the oven with your knuckles. Ouch.) and flip it round from front to back in one go. No need to mess about with spinning single pies.

  3. Hi France - pardon if I've asked this before, but I can't remember where/if I posted it. I'm curious about how often you feed your starters and which ones you maintain? From what I recall, you don't refrigerate your starters, and so I was curious about your routine.

    1. I only have the one. The 100% rye (hence the name of the blog). I feed anywhere from 2 - 4x a day. When not baking, twice, when about to make a dough, 3 or 4x.

      For instance, I am baking bread this weekend, so, yesterday i fed my starter at 7am, 12noon, 5pm, 10pm; today i fed at 9am, 2pm, 7pm, and I will make a levain at midnight.

      Because I will probably not bake again for another few days, I will feed twice until two days before levain build. Random times, like maybe 9 or 10am and again at 10 or 11pm. Something like that.

      I don't refrigerate it.


    2. Thanks France! But you used to keep 3 starters didn't you? I seem t recall that on your former blog. What made you decide to stay with the rye starter and what is the total volume that you maintain/feed with?

    3. Hi Marie. Many many years ago I experimented with several starters. Rye is just my favorite flour. I like the way it behaves in my starter, as the foundation for many of my breads. It's easy to make a starter with it (Chad's starter is notoriously difficult to get started) and to maintain one. And so, the name of the blog, 'Girl Meets Rye'. Rye allowed me to really start a bread life. The total volume that I keep is 60g.


    4. Thanks, France. I may begin a rye starter and see how it goes. my starter was lovely and then I had to refrigerate it because I was away from home and not baking much, and I feel like I'm starting all over again. 60 g seems much easier to maintain daily.

    5. Hey Marie. Well, starters are actually resilient buggers. When I travel I pop mine in the fridge and when I get home, feed as usual with no issues. I even keep a 'backup' in there that I won't feed for months, then I remember to feed it, and it quickly revives (speaking of, it's been a couple of months. I think I will feed that starter in there today ). You should be fine with the refrigeration situation.

      All one really needs is 60g of starter at a given time, unless of course you are baking loads and make a huge levain using a high percentage of starter. With 60g of active starter, I can produce 4 loaves of bread at a moments notice. I don't need to bake more than that in a week :)

    7. Hi France! Been checking your blog and the previous one for a long time but havent yet tried to make any of your recipes but will do it this week! thanks for the inspiration and such great breads.
      I had a question regarding your sourdough starter. I am currently baking with my starter which I feed everyday with 50g water + 25g rye + 25g wheat and now wanted to start doing it your way, starting from my starter. Would that be a good idea? I tried to find what were the amounts which you fed your starter but couldnt find it, would it be X g of water + the same amount of rye flour? thanks a lot for the help!

  4. Hi!! just want to know how long can you keep the dough in the fridge, If you only want to bake 2 portions, can you leave the other 2 for the next day?


    1. hey joe. no, it will overferment if you leave the other two for the next day. best bet is to make a fresh batch :)
